Beets and their beautiful red hue bring any salad to life! You'll love this colorful and flavorful fall medley - perfect for a holiday party!
Ingredients:
2 cups cooked and peeled beets (steamed or roasted), cubed
1 orange, segments cut into chunks
1 cup sliced red onion
1 tablespoon olive oil
2 tablespoons balsamic vinegar
Black pepper to taste
1 ounce goat cheese, crumbled
2 tablespoons chopped parsley for garnish (optional)
Directions:
1 Combine beets, oranges, onions, black pepper, olive oil and balsamic vinegar in a medium mixing bowl and toss well.
2 Sprinkle with parsely. Divide goat cheese evenly and sprinkle over each serving.
3 ENJOY!
